  1. Lavamos bien la calabaza, la pelamos y la troceamos. Hacemos lo mismo con el calabacín (pelarlo es optativo, al gusto de cada cual)
  2. En una cazuela ponemos un poco de aceite, añadimos la calabaza y el calabacín, salpimentado. Lo rehogamos y añadimos el brandy, lo dejamos que reduzca unos 2 o 3 minutos.
  3. Añadimos el caldo de pescado y lo dejamos cocer todo junto.
  4. Trituramos y decoramos con unos langostinos, hechos a la plancha.
  5. Para hacer el caldo, ponemos en una olla, aceite, las cabezas y las cascaras de los langostinos, el puerro, muy picadito, lo rehogamos todo junto unos 4 a 5 minutos, añadimos las espinas del pescado, sal y perejil. Lo dejamos cocer todo junto unos 10 minutos.
  6. Cuando esté cocido lo colamos todo por un colador, para obtener el caldo.
