Poner la quinoa en un colador grande de malla fina y la vamos removiendo unos minutos debajo del grifo, (eliminar las Saponinas y no amarge.) - Hervir la quinoa unos 12 minutos (para que no se apelmace), escurrimos y reservar.
En un wok o una paella más alta y ancha, poner el aceite y cuando esté caliente echar el ajo y la cebolla, al estar pochada añadiremos las zanahorias, la calabaza, el pimiento y el calabacín. - Pasados 2 minutos (mejor al dente) añadir la sal y la salsa de soja (3 cucharadas). Seguidamente la quinoa e iremos removiendo suavemente, ya por último añadir los brotes de bróccoli, lo salteamos, rectificamos de sal y taparemos el wok.
