- Caramelizamos la cebolla: La cortamos en juliana fina, y la pochamos a fuego medio, removiendo de vez en cuando, hasta que esté bien dorada con sus propios azucares. Le echamos las pasas y las almendras y reservamos.
- Pesamos la semola y le echamos la misma cantidad cantidad de caldo caliente y una cucharada de Ras el Hanout. Movemos un poco y tapamos durante al menos 5 minutos. Luego removemos con una cucharada de aceite para separar los granos.
- Montamos el plato con la sémola y los garbanzos formando una pequeña pirámide, con las verduras alrededor y coronando con la cebolla, almendras y pasas.
